Primarily used as a beast of burden they also use the larvae as a food source, and turn the exoskeletons into lightweight breastplates for cheap armor. They are also used to power the paddlewheels on their sailing ships...but that is another story.

There's another thing to consider - does one actually need or want a mount underground?

On the surface, there's large open spaces, and mounts help you cover those spaces faster. Underground, there should be few such spaces, and thus little need for mounts.
 

There was a scene in Siege of Darkness where a battlerager dwarf launched himself down a tunnel with a side throwing catapult. That seemed a pretty wild ride.
 


Would a dwarven paladin with a lance in a mine cart need mounted combat?

That is a neat idea for defense. Have used that trick with kobolds in mine charts charging down player characters.
