Some combination of immediately, after a few sessions, and during "downtime".

It really depends on if coin is immediately useful and what needs the party has. In terms of magical items, if identifying is a possibility then it will be given to someone fitting to hold (otherwise it has to wait), and in terms of art objects and jewels that depends on getting back to civilization where it can be sold off (which depends on the local market what might be gotten for it, otherwise it might be held on to for a while).

Paying hirelings and guides their share and paying taxes can also make a difference when splits are figured out.

In the current group I DM, generally only 1 player ever writes stuff down. Every once in a while (usually when approaching his encumbrance limit), he'll slough off a bunch of stuff to other PCs. In our last session, he sold most of the party's loot and bought himself a fine magic cloak that far exceeded his character's recommended wealth-by-level. :)

Seriously, though... It depends on the situation, of course. Typically after the adventure, since most often the powers of the items are not known immediately. Some obvious ones are used immediately by some, if it seems useful or necessary, but might end up in the possession of someone else later, when they have been identified. At higher levels, when my Sorceress was capable of casting Analyze Dweomer every now and then without limiting her spellcasting options too much with the usage of the 6th-level slot (like when she had 7th-level or even 8th-level spells, a single 6th-level spell slot isn't that much of a valuable resource anymore), we could also distribute stuff immediately or once a casting of the spell appeared worthwhile.
