Why would a 3rd level character take craft wonderous item?

You can also make items not in the book. With Gm approval. I wanted to take Craft wonderous at 3rd (can't since caster level has to be 3rd not char level) to make items not in the book. The book has guide lines to making items and as long as you don't go to far from the norm it handles most basic things.

If the Gm veto's any ideas you have not in the book ask to change the Feat since it may be useless to you. Get scribe scroll instead.

I'd take it at 3rd because almost every metamagic feat sucks and brew potion sucks as well so what else are you going to put it in at 3rd level. Maybe wondeorus items gets you very little at 3rd but this feat grows with you big time.

Notice you cited items that are specifically spelled out in the DMG under those items categories. Now find such specific info under Wondrous Items. You don't. The only specifics you find, and this is in the general rules for making magic items, is that you be able to cast the spells required.
