i think that if there is going to be a profession skill involved, it would be more something like profession: con-artist, with a special focus in fortune telling.
the profession skills generalize a whole set of skills which are tightly focused into a single career. but the skills that make up each set themselves are very likely to individually appear in more than one profession.
for example, any professional worth their stuff can appraise items specific and especially unique to their profession. both the carpenter and the engineer can appraise wood for quality and soundness. they may be looking for specific details that are different, but they are both appraising.
they will both be able to make bluff, sense motive, diplomacy, and intimidate checks during a good haggle or other negotiations with clients and contractors and the king's taxmen.
and so forth....
if the fortunetelling in question is not based on some divine and/or magical skill and/or connection, then it is a con. unless, of course, you have non-magical and non-divine astrology actually work in your universe; in which case that would justify a profession fortuneteller sub skill.
