Cool. Now tell me what I can make from an elf or an orc.
Thematically, various cuts of elf would probably be good for bonuses to Perception, bonuses to stay awake (I imagine elf-blood tincture would probably be like an energy drink for creatures that normally sleep), and bonuses to against charming or mind magic. Elfbone arrows would probably be strong against undead (a call back to elven immunity to ghoul paralysis).

Orc would probably give bonuses to Con or various endurance traits, or maybe minor versions of barbarian rage. Orcs have been more recently encoded as having a primal/druidy bent, so maybe some minor effects mimicking lower level druid or ranger spells.

I mean, for a more grim/dark setting, this honestly seems awesome.

Don't know, probably same what you can make from a human.
call a seance, we'll ask Dahmer for any insight.
"You know, forget hunting dragons. Elf commoners are where it's at! " - PCs, 15 minutes after reading this rule.

Anyway, I just would like to keep away from fantasy cannibalism in the game.

should sentient creatures not give XP, or any loot also?

maybe Drow can give you one casting of darkness before your next long rest, as metabolism will use up everything after that.

This, much like many other conversation paths, quickly leads to 'dont look too deeply or it all falls apart'.
