what were the most unique 3.x supplements?

Good call with Anger of Angels and Requiem for a God, Knightfall. Er, and BoEF, I guess. 'Unique', yes.
Anger of Angels is one of my favorite books from Malhavoc Press. It has given lots of great ideas. Requiem for a God also has given me lots of good ideas since it fits so well into my World of Kulan homebrewed setting.

BoEF is definitely unique and some of it is actually useful. ;)

Along with the first two though, I'd also add When the Sky Falls. Same company again.
I thought of listing When the Sky Falls, but isn't a book I consider vital to my various settings. It is pretty unique, however.

Speaking of Bluffside, Mystic Eye Games' Foul Locales series was one of my absolute favorites and pretty unique. They presented about 20 locations all based along a given theme (city, country, town, etc) that could be parachuted into just about any campaign. Definitely one of my absolute fav's.
 


I actually got some use out of When the Sky Falls, the Malhavoc book about a big meteor hitting. That's it.
That was one of the only books that inspired an entire campaign for me. All of the "event" books from Malhavoc were great.

I'll also second Oathbound as a very unique and awesome setting. It'd be great to see it resurrected someday. *sigh*

It seems most of the unique (and to me, most interesting) WotC books were at the end of 3.5 - Incarnum, Tome of Battle, and definitely Tome of Magic. ToM was probably my favorite WotC book overall - it struck that perfect nerve for me of being original and quirky/strange. Plus Secrets of Pact Magic from Radiance House expanded upon the binders much more.
