Looking for ideas for a demon/undead slayer

First off, extra favored enemy would allow you to get one level of ranger and then use this feat to get another favored enemy. Also, you could probably get a house-rule variant to replace the cleric's turn undead or the paladin's smite with favored enemy like the ranger. I know that I'd allow it.
As for prestige classes, the Hunter of the Dead, from page 42 of Complete Warrior, has some decent abilities. The real gem for you, though, is the Sacred Exorcist from page 56 of Complete Divine, which gives you turning, full spellcasting, a class feature called "Chosen Foe" which behaves very much like favored enemy, and a bunch of other cool class features.

Cleric is probably the best bet, just because it's so powerful. Check out Church Inquisitor prestige class in C.Divine for help with demon-fighting.
Note that elf and half-elf rangers can use the substitution level from races of the wild to get undead favored enemy at a +3 instead of +2 (and extra +3 instead of +2 each time you raise it) and there is the dragon mag. alt. class feature called Solitary Hunter to trade animal companion for the ability to add FE bonus on attack as well as damage (and as written, you actually get this at Ranger 1, not ranger 4, which is kinda unbalanced). Also note that a scout/ranger w/ the Swift Hunter feat can use skirmish damage on his favored enemies (as well as stack both classes for FE and skirmish progression). So a Swift Hunter build could be possible for a different way to do this.
For items, do you have Magic Item Compendium? It has tons.
- Fiendslayer and True Death weapon augment crystals to boost damage against each creature type and overcome some of their protections. You can freely switch out what crystal is on a weapon as a move action to attach or remove.
- Sacred (and Sacred Burst) enhancements for weapon. Look it up, you want this!
- Divine Wrath weapon ehancement if doing a cleric. Burn turn undead uses to do a lot of bonus damage on a hit against undead instead.
- Two whole item sets, "Vestments of Divinity" and "Wraith's Woe," both are helpful with various items such as gauntlets of ghost fighting to give every weapon you have Ghost Touch or Shirt of Wraith Stalking to hide from undead, and so forth.
- The Enemy Spirit Pouch is an amulet slot item, but cheap enough to pay extra to add it to some other neck slot item. It's basically the same as FE +2 against the specified enemy type.

You could, if you wanted, be a Paladin with the Charging Smite ACF and take the following feats to really smite the heck out of your enemies.
Power Attack
Law Devotion
Extra Smiting
Awesome Smite

There's actually a really awesome "Hunter of Fiends" Paladin variant out there, I think from dragon mag. Gave FE vs. evil outsiders, a banishment aura, and such. Crystalkeep had it. If you happen to have those pdfs or know of the mirror sites that picked it up, you could check it out...
EDIT: Oops, the aura part was from another variant called Aura of Banishment. But you can combine the 2. The aura's awesome because it blocks teleportation and summoning in/out of it by any outsiders equal or below your Pal level in HD.

Needs moar Hellbreaker from Fiendish Codex II. Full BAB melee class with swift action boosts that include healing, smiting, and general merriment. You also get the ability to smack a fool so hard, he forgets how to teleport. Great entry includes Spirit Lion Barb1/Pal of Freedom4/Hellbreaker10. Gets Turn Undead for Divine/Devotion feats, pounce, full BAB for maximum PA conversion, etc.
Good in general for melee, GREAT for Fiendslaying specifically.
EDIT: Pal of Freedom gives you immunity to Charm/Compulsions and Hellbreaker covers [Fear]. Between them, you have 95% of the benefits of Mind Blank at ECL 6. Not half bad.
