Uncanny Dodge (Rogue Class)

Starting at 5th level, when an attacker that you can see
hits you with an attack, you can use your reaction to
halve the attack’s damage against you.

Spells that involve "spell attacks", definitely.

Something that does not involve an attack role, but is save to avoid, unclear. Maybe not.

Saves are taken care of with the level 7 Evasion ability.

Thats what I was going to say, though to be clear, dex saves are.

If uncanny dodge only applies to "rolled" attacks, and evasion covers dex saves, you still have mind affecting and poison and disease affects (and getting knocked around by certain beasts) that are covered by neither. Which seems right.

Yes. This came up the other night in my game. White dragon breath calls for a Con save. There was a quick question as to whether the breath weapon constituted an attack. I allowed it, cuz what the heck. But if an attack requires an attack roll (seems likely? Don't have my books handy.) then I'll probably clarify the rule next session. We have a group agreement that we don't waste time with rules checks in-game to avoid breaking the flow (we only have a short time to play). But we work out the actual rule inbetween sessions.

I would cross-check with the Invisibility spell. My old stand-by ruling was that an "attack" is anything which would break Invisibility.

In this version, an attack is something with an attack roll. So the spells that say "Make a ranged spell attack" or "Make a melee spell attack" would qualify as "attacks." The one exception I can think of is magic missile which is an attack which automatically hits.
