So I can transform to a cheetah when I get wildshape at level 4. It has a base speed of 50, plus sprint. By the wording of Wildshape and Beast Shape I, I don't get that base speed and sprint, correct?

You certainly get the base speed. I don't think you get sprint. I'm not sure about the last bit, though.

Does it? I just remember 1 day per 1000 gold. I didn't see that about game days vs. real days.

That's fine about the sprint. Move of 50 is like sprinting. What about skills? Do I use my own or do I get the animal ones?

You would get sprint. You get all the abilities in the animal stat block. You become the animal. You essentially become the animal, with only the few limits imposed by the spell (which I have never had come up with my level 11 PFS druid).

You use all your own stats, including skills, though they will be modified by the dex/str changes of the wild shape.

We diverge here. You don't get all the abilities in the animal stat block only the ones called out by the particular spell. If it is not on the list then you don't get it. It's not a full transformation; animal ability scores don't replace your own, for example.
