Depends I suppose on what matters to you.
For those players that care for very little except game mechanics... subclasses and subraces offer not much difference. Most subclasses have like what, four levels of "stuff"-- two of which don't occur until the teens in level which means many tables will never use them-- and so overall you're only getting a couple new gadgets to play with. (Plus the fact that those gadgets are oftentimes the same mechanics that we already are using-- like gaining Advantage-- just in a new way.)
But for those people for whom the fluff matters most of all... there are a plethora of new ideas and concepts for characterization in all of these things. The Circle of Stars druid might not have this huge new game mechanic that "changes the game"... but if you are playing in Theros for example, the fluff and visualization of this subclass fits in perfectly with Nyx and the Nyxborn. The subclass will give you ideas on how it fits. And almost all the subclasses have these "idea generators" baked into them for new character concepts.

@PsyzhranV2 Duergar were given as a dwarf subrace in Mordenkainen's Tome of Foes. But otherwise great job in compiling everything!

I plan to establish it now. My group aside from me is not into tashas.
I am probably done at this point aside from a great module.
I was sort of bred to play a lot with a finite number of books. Playing wi the pals and not strangers makes this doable. I am not ready to pay WOTC for a whole new system.
and unless they change their behavior in some spaces I am not only satiated but not into their extra game related stuff.

My suggestion is to give a "subclass feat" in the first level to show your PC is since the first instant.
I like the idea from Pathfinder 2 about replacing racial traits with optional of race feats, allowing more flexibility and avoiding "typecasting" with classes (for example gnomes or rogues or illusionists).
But still it is too soon for 6th Ed, because there are enough space to before testing new things, for example new classes with special game mechanics, and not only the psionic powers.

This attitude is so confusing to me. At the end of the day, having "too many options" will only occur if:
* You are playing a campaign that includes Forgotten Realms, Eberron, Theros, Ravnica... If you are playing only in one campaign setting, the options are cut down dramatically.
* You ignore the fact that at the end of the day, you will only have as many races and classes at the table as needed for the number of players at the table. I have 4 players. There may be 100 subraces and subclass options, but I only have to worry about the 4 my players pick.
Not only are there so many other RPGs that cater to a more limited palate, but D&D itself has systems in place to limit the number of races and classes you want at your table. Simply saying "this is a Lord of the Rings style campaign" limits the choices.
Furthermore, 5e has systems that keep new subclasses in check, like bounded accuracy. And the optional origin rules in Tasha make it even easier to have the characters at the same "power level," if that's your preference.
I honestly don't see how having more options is a problem.

I checked the SCAG, Gray Dwarves (Duergar) are there with the same racial traits as the MToF reprint.
