Harengons are medium or small humanoids with a bonus to initiative, Dexterity saving throws, and a 'rabbit hop' which lets them jump up to five times their proficiency bonus without provoking opportunity attacks.

Creature Type. You are a Humanoid.

Size. You are Medium or Small. You choose the size when you select this race.

Speed. Your walking speed is 30 feet.

Hare-Trigger. You can add your proficiency bonus to your initiative rolls.

Leporine Senses. You have proficiency in the Perception skill.

Lucky Footwork. When you fail a Dexterity saving throw, you can use your reaction to roll a d4 and add it to the save, potentially turning the failure into a success. You can’t use this reaction if you’re prone or your speed is 0.

Rabbit Hop. As a bonus action, you can jump a number of feet equal to five times your proficiency bonus, without provoking opportunity attacks. You can use this trait only if your speed is greater than 0. You can use it a number of times equal to your proficiency bonus, and you regain all expended uses when you finish a long rest.

When you create a harengon or fairy using the rules from The Wild Beyond the Witchlight, you can choose to increase one ability score by 2 and another by 1, or choose to increase three different scores by 1. Further, you know Common and will choose one other language to learn.

By why an Animalfolk frame? With the new mechanics that allow floating Stat mods and selectable Size, why not just eliminate races entirely and just have a list of traits?
That would work too, for advanced players. I've always felt that races were basically pregen bundles and cut down on option overwhelm/paralysis. Personally though, I don't want to drop races altogether; might as well do the same thing with classes in that case, and just build a character ala carte. PF2 does a lot of this, and look how monsterously big the base rulebook has become because of it (I don't even want to try to parse it, GURPS would be easier at that point).

Wouldn't hengeyokai fill that slot? That way, you get human form, animal form, or if you wanted to run around in your hybrid form all day, go for it.

Shapechangers are a whole 'nother ball of wax (including hengeyokai, kitsune, lycanthropes, shifters, etc.). Anthromorphs are more hybrid shape only, humans underneath with a mythical attribute from their animal resemblance.

Harengon... the new Kender?
Kender gained their infamy from their fictional portrayal and their personality being "Be as disruptive to the policy as humanly possible", whereas the Harengone have a lot more fictional portrayals to go off. You've got Alice in Wonderland, obviously, but you've also got Watership Down if you want some nature being red in tooth and claw action. Just the general idea of rabbits as plucky, good natured trickster sorts who make up for their lack of size with trickery is a longstanding mythological thing
Too many animal folk. I think we're fast approaching the "They were so preoccupied with whether or not they could, they didn't stop to think if they should."
Blame mythology on that one. Folks have anthropomorphised animals for centuries so if you make something related to mythology, they'll just, pop up inevitably.

Those guys all look pretty bad-ass. While you're PCs are laughing that they are facing bunny-folk brigands, you drop those angry looking dudes on the table . . . .
"In the fading dim-light of twilight in this warped fey landscape, you can see the silhouettes of a group of vaguely-human-shaped creatures appear over the top of a ridge on top of the cliff that juts out over a chasm directly in front of you. This group of creatures are squat, standing between 3 and 5 feet tall, and appear to be wielding spears and have two pointed-shapes jutting out of the top of their heads. They stop for a moment at the edge of the chasm, inspecting its width, and then turning towards each other, nodding their heads in unison. All at once, you see as the group of humanoids leaps across the chasm, as if they have springs for legs, crossing a distance of over 20 feet in one mighty bound.

Flying through the air, the light of your torches is able to illuminate them as they get closer. Just before they would reach you, you can see who you are truly facing; a squad of humanoid-rabbits, clad in colorful leather vests and trousers, with gray fur and large ears sitting atop their heads. Just as they come into view, they hit the ground, rolling expertly to reduce the impact of the ground land 10 feet away from you. Standing up from their roll, they all point their spearheads directly underneath your chins, nearly gutting you instantly. One of them in the front, who wears a bandolier of daggers across their chest, speaks quick and crisply, 'Why are you on our land, trespassers? Speak quickly, or bleed.'

What do you do?"

I wish we actually had a single "animalfolk" race that covered a variety of anthropomorphic races (choose your appearance, choose your stat mods, choose a race ability that you feel matches your appearance, boom - done).

Better idea: let's add all the Tolkien humanoids and planetouched to the list and make it how you do all "race/lineage"?

EDIT: looks like @Tonguez already beat me to it.

I'm all for getting rid of dwarves, elves, and halflings, and rolling them into the human stat block. You get to choose beard, pointed ears, or shortness as a racial feature.

This would leave more room for things that are actually different like warforged or myconids.
