Extra (extra) Sharp Cheddar

Slice cheese very thin. Put mayo on sliced bread (I love Dave's Killer Bread). Layer the paper-thin slices of cheese to desired thickness. Put butter on the outside of the bread, fry on a cast-iron skillet. Use a metal spatula to press down on the top. Flip once, and wait for perfect meltiness.

Alternately, I love a non-melted cheese sandwich with extra sharp cheddar, mayo, mustard, and sharp greens (like arugula). Maybe some cucumber, too!

What kind of cheese?

What's your special recipe?

I've been doing grilled, thick wheat with butter on the outside, Colby Jack melted on the inside. But I'm looking to expand my horizons.
I don't have a recipe, but when my wife makes it she uses sourdough bread and pepperjack cheese. And butter in the pan. Mmmmmmm!

I've been doing grilled, thick wheat with butter on the outside, Colby Jack melted on the inside. But I'm looking to expand my horizons.

I'm not a grilled cheese fan. But an Aunt of mine had a recipe we still often make at family Thanksgivings and/or Christmas eves for a snack. I guess it would be an open-face baked cheese sandwich.

A loaf of party rye bread (the tiny sized loaf)
A pound of Jimmy Dean Spicy Sausage
A pound of Velveeta (cheese food product, I guess)

Brown the sausage, drain the greese, melt the Velveeta into it. Spread it on the party rye bread and bake on a cookie sheet at 400 until starting to brown (10 minutes?).

I wish they sold smaller sizes of the sausage and Velveeta because otherwise you need a crowd.

Also... what do you call them?

There is a heated debated in my home about their name. Almost everyone I know calls them a "grilled cheese" (despite the fact that they're not actually grilled). My wife calls them a "cheese toasty." As far as I can tell they are only called a "cheese toasty" in two hyper local areas: Decatur IL and somewhere in England. (Ran it down once. Can't remember the exact town. Might have been Bath.)

I prefer the deconstructed grilled cheese.

A few hot saltine crackers, chased by a double blast of cheez-whiz straight down the pie hole.

If we're allowing no cooking of the cheese at all, I'm going bruschetta or the like with jalapeno pimento cheese. Pimento cheese is also the correct answer for what kind on cheeseburgers.
