Can you give the precise quote, please? Or page number?

There's reference on p. 118 about alternate forms of Tieflings (though none with animal heads), and a short sidebar on p. 119 about Aasimar (but nothing about animal heads).
OK, so looking into this it looks like I conflated the statement on page 119 that many Mulhorandi Tieflings are believed to be descended from the gods with the suggested alternate aesthetics from the sidebar of pahe 118.

I would bet (not money) on Goliaths and Half-Elves being.

With Half-Orcs I lean towards the idea that they will just make Orcs a playable species, no longer inherently evil, and trying to avoid the various gross and racist tropes that Half-Orcs invoke.

Nah, Half-Elves are out as a distinct option.
 

I don't like to be overly cynical, but presenting the options of half-orcs anbd half-eves "optional"/legacy in the new DMG lets them have it both ways -- not in the phb, but there as backwards compatible.

= complete backwards compatibility
= lets them claim innovation and justify a new purchase
= player options in the DMG and so additional sales.
 


i feel like the easiest option would just be to put the half-elf/orc in as their own unique subrace under elf and orc, that way they're not taking up two entire species entries but they're still respected enough to exist as their own distinct mechanical entities, put in a line about 'while many other cross-species people exist across the continents these two specific combinations of lineages have notably thrived and formed their own communities and identity'
