Anyone can be anyone. My Jaheira is a bard, since I already had two druids on my team by the time she joined.
Yeah but like Wyll kind of needs to be a Warlock and Gale a Wizard and Halsin the Druid or their backstories tie heavily into their premade class. I'd even say the same for Jaheria the famous fighter/druid and hero of Baldur's Gate!

Karlach, Lazeal, Astarion, it doesn't really matter what they are class wise. At least, not that I've experience yet.

I respec Minsc's stats into, well, Minsc, but I keep him a Ranger.

A Hunter Ranger, to be exact, and here's why if you don't know already: The BG3 version of the Hunter Ranger's level 11 Multiattacks (Volley and Whirlwind) count as individual attacks, rather than as whole actions. Which means they actually get multiplied with Extra Attack, so the Hunter Ranger can do two of them every round. This means as long as you can catch even two enemies in the radius of Volley or Whirlwind, there is literally no reason not to do it.

Giving Minsc a greatsword and Great Weapon Master, he's an absolute wrecking ball when set up against multiple enemies that are all within his melee range. Which turns out to be a fair number of Act 3 battles. Especially if you Haste him (with how that spell got buffed in BG3 as you probably know by now) or have him chug a Potion of Speed (same effect) so he can do 4 Whirlwinds every round.

Lae'zel mentions a few times about training her body to perfection and being disciplined, which screams Fighter or perhaps Monk. Other melee-type classes have less flavor emphasis on that sort of thing, so I feel like she needs to be one of those two classes.

Karlach is a bit more flexible. Vengeance Paladin is almost as appropriate as Barbarian for her; you could argue maybe even moreso. (Also fun fact, in the earliest part of Early Access, Karlach was tagged as a Paladin.) Fighter or even Ranger works well for her, too.

Astarion, yeah, he can be just about whatever. Probably wouldn't make him a Cleric, Druid, or Paladin, since he doesn't seem to be about worshipping things or taking oaths, but just about anything else is fair game for him.

You missed out BIG. Literally my favourite boss fight of the game and it isn't even close, and just some really dramatic and wild stuff in general. Also more crudely some of the best items in the game.
By the time I was moving around BG my laptop was weeping, and when I couldnt get a quest to trigger (it seemed anyway) to free Minsc, I decided to just forge ahead and finish that run.

I could see Laezel as a monk, especially with the other gith monks we see (btw are we at the point in history before the Githzerai and Githyanki split? The first time I saw the gith monks I immediately thought they were githzerai)

I have only played as Tav so far. The romance options in BG3 have given me several ideas for playthroughs.

My Tav has noticed the ongoing hostility between Lae'zel and Shadowheart. I'd like to do a playthough as one of them and romance the other -- the "enemies to lovers" trope. I'd probably play Shadowheart as she is more in the vein of the characters I like to play.

A romance between Wyll and Karlach would also be fun playthrough -- partially because of the enemies to lovers trope and also how closely their backstories are intertwined.
