I haven't seen a camaro in ages, and I believe I pronounce my Rs mostly. But any car will do. At Kelly's you can even eat them on the beach. And places usually have indoor seating. But if you want to roll up in a camaro and north shore tuxedo be my guest. These are pretty casual places

I think a good roast beef needs no cheese at all. I can understand swiss or provolone. Mayslacks here in NE has(d) amazing roast beef sandwhiches. Folks wanted cheese so they started adding an option with...cheezwhiz. Things started going down hill about that time.

I don’t have a strong opinion either way on whether or not a roast beef sandwich “needs” cheese or not. I’ve had exceptionally good AND bad sandwiches both ways.

Cheezewhiz…was part of my childhood & adolescence, but I haven’t had it on anything in decades except possibly some Philly cheesesteaks. Don’t even recall the flavor. I can’t see putting it on a sliced roast beef sandwich.

If I were making a hot cheesy sliced roast beef sandwich at home, I’d probably start with one of the cheeses I mentioned upthread. Other strong possibilities would be an onion Jack or onion cheddar, cotswold, colby, colby jack, dill havarti, cream cheese, Brie, port wine cheese spread, beer cheese, mozzarella, parmesan, gouda, parrano, akkawi, feta, or labneh. Which one I’d choose would depend on things like how the roast beef was seasoned, what kind of bread I was using, and what other toppings & condiments were in play.

This is the key with cheese. If the seasoning conflict with it (and if one likes or dislikes cheese). Some foods I like cheese on beef, some I don't (if I am eating a steak I definitely prefer plain, if I am eating a roast beef sandwich I will often get it plain but sometimes the cheese gives it a more complete feel.

Also can't emphasize enough the north shore roast beef is not a delicacy or high end food (though the beef usually is made very well and good quality). I have had north shore roast beefs at more high end restaurants (there have been a few attempts around here). What they make tastes good but a roast beef is mac n cheese comfort food. I like mac n cheese but once people start putting lobster in it or throwing truffle on it, that is a big too fancy for me (and I love lobster on its own)

Comfort food is vastly under-rated in many cases.
 






Honestly, having strong opinions about the right or wrongness of other people's taste in pizza toppings is so weirdly American.
It matters more if you’re sharing a pie, which is pretty common here in my experience.

By strange coincidence, a relative from out of town is stopping by tonight (any minute now). Depending on how much of his family is in tow, we’re either getting takeout pizza or going to Cici’s.

(If it’s the latter, I’ll be having at least one slice of Canadian in y’all’s honor… 😜 )
