How "Done" Do You Like Your Steak?

Chicken Fried Steak is to be topped with pepper and sausage gravy and that is it (adding hot sauce is also acceptable and encouraged)
That's way better than ranch, for sure. (Seriously, Oklahoma: why are you so obsessed with putting salad dressing on everything?)

I like my CFS dipped in spicy barbecue sauce, then topped with caramelized onions. But I'm a weirdo; just ask my family back home.

Pittsburgh rare or medium rare; the first is preferred but not always offered.

A friend of a friend ordered a thin steak well done recently. If I’d had a monocle it would have popped out, I can tell you. Of course, a gentleman never comments on another gentleman’s choices at the table.

Honestly ime with a thin steak it's not really worth trying to order it any other way. It'll come out well done more times than not anyway, just embrace it.

Think thats the problem my last steak i had was. Probably last bit left in the box it was tiny. Came out well done the waiter didnt even attempt to disagree.

Replacement was medium or just over that. Ordered medium rare. Close enough and I was hungry.

Its mostly a delivery device for peppercorn sauce anyway.

Thin steaks are the way to go if you want it well done. A lot of restaurants will typically butterfly well done steak orders because it takes less time, and less chance of being too dried out.

But I can vouch that in Oklahoma, everything is breaded, deep-fried, and dipped in ranch dressing: the steak, the potato, the onion, the cheese, the pickles.
I used to like Ranch, but after a few years of ubiquity, I almost entirely stopped eating it. Now, it’s only a dip for things like fried appetizers (mushrooms, zucchini, onions).

Sorry, I take a Germanic approach and eat it like schnitzel. Specifically, with a brown or mushroom gravy, and some freshly squeezed lemon.

If brown or mushroom gravy are not available, then just lemon juice.

Because Texas.
