Minions are meant to be put out for characters nearer there level. Thats why you can have so many in a balanced encounter. My idea would be to keep 2-3 Vampire minions and use some basic zombies for the rest. Im not sure if they have stats for them yet, but with 4e its really easy to make them.

In one of the 4e home games i was in, the dwarfs tide of iron moved an enemy into a pit trap. In another one, with Goblin Picadours, they were dragging the PCs into swarms of goblins.

I would just stick with a theme and story for the character. Mechanics-wise its gonna be a whole different ballpark. And unless you feel comfortable starting a mid level game in a new system, then i would do what wizards suggests and wrap up the campaign before 4e comes out.
Could also be that all undead share certain traits and the ones they have statted only show what that particular one has immunities to minus the basic undead immunities.

Turning is pretty cool. We ran a demo for 4e and the cleric was able to Turn Undead. Sure, they had to get within 2 squares. When you ready your action though to turn, its nice. I forced 3 skeletons back 5 squares away and did a good deal of damage.
