I've never found it to be "easier" to run my own, but it certainly isn't much harder. The main difference for me is inspiration - if I'm in the groove and have good ideas coming, it's easy to run my own - but that doesn't always happen, so when it doesn't it's nice to have a pre-fab on the side...

Nope. You're going to have to pull some monsters out of most of the encoutners, especially the higher level ones. Take out monsters based on role and party make-up - that is, if your 3 PCs don't include a wizard, pull out minions - if they don't include a striker, pull out brutes, etc.
