It has made me think that perhaps the solution (or part of the solution) is to treat the monster itself as the terrain, or another level of terrain. The monster might force you 'off' its terrain if it lands a blow.

As an obstacle, though, I think he's immune to stunning (though you can damage him), so that's one problem down.

Seems appropriate.At the moment it may be prudent to have three mini-adventures.
Divine Spark, Portfolio, Pantheon.
Ok, that clears a few things up.At the end of the quest the character could be 31st-level (ie. 1st-level Immortal)
Will it be possible to gain double portfolios?You gain portfolios as follows.
1st Portfolio: 31-35
2nd Portfolio: 36-40
3rd portfolio 41-45
Fourth Portfolio: 46-50
But the portfolios/dimensions function as classes right?There are no classes beyond 30th. Only Portfolios. There are no portfolios beyond 50th, only dimensions.
Will there be any divine equivelent to feats?There are no divine/cosmic abilities (as such). You gain powers based on which Portfolio(s) you take. These powers will be the defacto Divine/Cosmic Abilities.
Are there any adjustments beyond that?By default, I'll be statting out the main entries as Solo Monsters.

i.e. is Moradin a level 37 Solo/Level 46 Standard?
