Why is it that every 'consequence' also punishes the player with homework?
I think in most cases what happens to whom and how comes down to the context of the moment.
Is the DM trying to show you that the world is out to kill you? If so i like the idea of the aging from the ghost being relative to the species. If the DM is just crunching numbers to get to the next pile of treasure than follow the rules a written and the demi-humans have nothing to fear from such things. Neither way is wrong.

When you roll a history/knowledge check to find out information about a thing so you know how to interact with that thing; is that meta gaming?
No. In character, it is your character recalling facts the character knows that the player does not.


A PC jumping in front of an attack to take a hit for a party member is what heros do....is it out of the ordinary for an adventuring 600 year old elf to know what ghosts are capable of?
It would depend on the campaign and the experience of the elf. If it were obvious the elf couldn't know about ghosts, then it would be if the player acted on player knowledge.

Metagaming sometimes allows for great moments in gaming.
Your two examples, neither of which may be metagaming, haven't convinced me metagaming is good.

One PC saving another PC isn't a good reason to metagame?
We play different games my friend. As long as we are both enjoying the way we play than its all good.

If that's the system you want to use, I'm fine with the DM doing the homework here.

Not every comment secretly means the DM wants to give the players grief.
