Off-hand they sound find as general gifts. Though I'm no expert on Gond, I never really pictured him as a healing god, so I'm not sure how pertinent the scrolls might be (of course, he might have Healing in his domains for all I know...as mentioned, not an expert).
As for the crossbow, it depends on how much you want technology/advanced technology to play a role in the game. As a suggestion, since that is a very nice ability if it can be used as a free action like the Repeating Crossbow. I think 50 bolts is a little unrealistic, especially if it can be collapsed (not sure how to collapse a clip of 50 bolts).
I'd suggest just using the Repeating Crossbow in the DMG with perhaps a larger clip of bolts (perhaps 10 instead of 50). This method gives you at least a little more of a RAW gift and basis for it while allowing you to still give him something even better a little later on. The holy water is a fine idea, especially for a cleric. As for folding it up, I can see it done, just not sure what rules effect it might have. Perhaps something capable of being able to be broken down so it could be hidden on several PCs and then put back together after slipping through some guards after claiming the PCs weapons (as they always seem to do sooner or later).
