There's nothing beyond what's already in the Athletics skill.

I would rule that you need at least one free hand to Athletics/climb.

So, climbing partway up a wall and then throwing a dagger from one hand seems fine. Climbing partway up a wall and then swinging with your fullblade is not.

Based on what I've seen some climbers do, I'd let it happen but it's going to give some hefty penalties on your climb checks.
 

Yeah, that's a tough one. The dice will be down on the ground and you will be up on the wall somewhere. You might consider using a telescope or binoculars slung from your neck with a lanyard so that you can raise it to your eyes one-handed.
 


By RAW climbing doesn't restrict you in any way in terms of what actions you can take or limiting you to not using one or both hands. So basically the DM has the job of coming up with appropriate situational modifiers if needed. I think it should probably depend on the details of the situation. I can imagine situations where the character is going to need to have both hands occupied, one hand free, or maybe both hands free. In a really problematic spot a character might be required to make a climb check to even make an attack, or suffer a penalty.
