If you do want to sneak attack undead you can always gun for the skull clan hunter from the minis handbook.
As for the party? It doesn't sound like they'll learn. We have a player like that in my group. Drops webs on the party, and once killed a character of mine by stepping into the one space I could retreat to while flanked by girallons, while I said "If you move there I will die." *rolls eyes* OTOH people that thick skulled will usually put up with being yelled at in character, so if their tactics suck, tell them so in game.
