Yep...you can totally obliterate most CR 2/3 stuff with a 7d6 orb, but if you've only got a few of those, then things start to get interesting.

Of course, at that point, they then resort to AoE stuff. But, hey.

Alternately, buff the target's HP some, so they take more than one to go down. Maybe they don't have a terribly high regular AC, so the fighter and rogue can easily hit them, too.

If the caster has a good Natural Armor bonus (or a way to get such), scintillating scales is a great spell to help touch ACs. 2nd level sorc/wiz spell that converts Natural Armor to Deflection. It's in Dragon Magic, I believe; intended for dragons to use, obviously, but not restricted to them in any way.
 

If you want to be really nasty, have an opponent catch the Orb and throw it back - Deflect Arrows + Snatch Arrows. I know the feat description says that you can't Deflect missiles generated by spells, but an orb is a real thing, not a Magic Missile, so should be allowable. If pushed, simply give him a Ki feat which allows this.
