They are immune to ability damage but not ability drain. If you check the undead type, it states that they are immune to ability drain as well. Thus, it may have been a mistake, but the tarrasque as written is not called out as immune to ability drain as far as I know. Hmm...

Now, how to do 1 point (or 3 points, to incapacitate it) of Int drain against a creature with defenses like these? Including immunity to disease and poison. Still, magic, magic items, possibly certain class abilities, and/or creature abilities might work.

Energy drain is different. Check the entry on the undead type. It lists them all separately and says that undead are immune to each.
 

Hmm...the 3.5 Intellect Devourer doesn't do Int drain anymore. I guessed they realised that Int-drain was overpowered when used on very dumb creatures. If anyone knows something that still has permanent Int drain, please speak up :).
