Okay, Quick question:

What (if any) skills are considered class for a celestial dire wolf paladin mount?

I've never really seen anything that says one way or the other. I'd just use some common sense...

Balance, Climb, Jump, Swim, Move silently, Hide, Spot, Listen and Wilderness lore are all skills that animals in the MM take as class skills.

Skills listed for a monster are class, all other are cross-class (MM p. 11, "Skills", 1st paragraph).

A dire wolf has Hide, Listen, Move Silently, Spot, and Wilderness Lore (MM p. 57). None of the other modifiers change that.
