No, I know perfectly what's in there. And the point still stands. Deathrattle Viper works perfectly as a rattlesnake (reduce its size from Medium to Small, if you want to). Crushgrip Constrictor is a constrictor snake (9th level is too much? reduce the level using the DMG rules).You need to look at those entries closer. There is no black bear or grizzly bear, but cave bear or dire bear. There isn't a regualr boar, as there was previously, but dire boars and thunderfury boars. The panther entry has fey panther and shadow panter, but nothing for a regular, normal panther. The rat section talks about giant rats and dire rats and a rat swarm, but othing about a regular rat. The snake section doesn't even have anything that would be close to a normal constrictor or pit viper. The only two animals that are detailed in normal are the wolf and horse and I already mentioned that. Those are the things that are missing and have always been a part of previous editions. I think it's a bit silly to space it out among multiple editions of the MM.

Take the Fey Panther, remove the supernatural abilities and presto, you have a regular panther.
Regular rat? What good would stats do for a regular rat? They're only dangerous as a swarm, and that one is statted up!
The "cave bear" entry serves well for black bear, smaller brown bears, bespectacled bears and other Medium ones. For grizzlies and polar bears, use dire bear stats.
The dire boar entry can be used for buffallo, bulls, elandes and other large herd animals. For deer and the like, use a Horse (bite -> gore). Change size from Large to Medium and you have rams, smaller deer, mountain goats and such (maybe add a climb speed?).
You have the basic tools, so use them.
