I saw this and wondered just how much of the monk's abilities are tied to being unarmored. I know the slow fall, monk bonus AC, and bonus speed is but are there any others? Since most of the time a paladin is usually armored.

Just check the monk class features. Monk :: d20srd.org

You lose AC bonus, fast movement, flurry of blows, evasion (light armor is ok for Evasion) and improved evasion, and...that's it. Still a lot to throw away.

Don't even think of doing Ascetic Knight without the Serenity feat is my advice. That feat, from Dragon Compendium volume 1, ties all of the paladin's abilities to wisdom instead of charisma. So you "only" need strength, dexterity, constitution, and wisdom then at least.

Definately: AC, Flurry, Evasion, Fast Movement
Arguably: Improved Evasion
And.... that's it, RAW. Slow Fall, interestingly, doesn't seem to list it.

Could you give me the exact wording and requirements on that feat then please?

Ah, that probably won't work, I was thinking a monk dip and hoping it would have more general language because I was looking to go full out gray guard.

I ask because there may be other ways to get what you want without that feat...or without levels in Monk at all.

Actually, if his build is going to be wearing heavy armor, he might not need an impressive Dex either.

Well I was looking at a debuffer of course being unarmend readily allows me to perform debilliatating and devastating touch with an attack. I was looking at freezing the life blood, intimidating strike, and imperious command. I was thinking this character to be a half giant so bump up has natural ability and a tad bit more pscionics and then heavy armor optimizations and deflective armor transfers my armor bonuses into deflection bonuses while pscionically focused. I also found a way to pick up the travel domain.
 

So it sounds like you're going for a more monkish build than a paladin-y build...what are you hoping to get from the paladin side of the build?
