Let's get this out of the way: the documentaries are all about special effects. If that doesn't do it for you, you'll be unimpressed. No chats with the cast. No talks with the director about anything other than special effects.
I have something of a deaf ear when it comes to the complaints about working in a 100% blue screen environment. Studio theater actors do this all the time in black rooms, sometimes even without costume and they can do a very good job indeed. Not that any actor complained because, as I said, there were no comments from the cast. So maybe I'm just really reading into things that Lucas said.
The cut scenes were better than those in Phantom Meanace. Lucas felt they slowed things down just to give uncessary backstory. As my wife said last night "Yeah, that's called character development!" Padme's lonliness was empasized and Anikin is presented more as the first guy to come along and pay attention to her rather than her station. Also we see more of Natalie Portman's tummy, by far the single best thing in the movie. I don't think this excuses the Anikin-as-psycho-stalker angle, but an attempt is made to make more sense of the relationship.
Other scenes involving Count Dooku (which Lucas prononced Duh-koo) I agree could have been dropped and the bit with Obi Wan tracing down the injector thingie was also pretty unnecessary.
