Attacking an object in someone's posession

If a character wants to attack an object that is being held or is visible on a person/creature, what is the rule? Is it the default AC of the creature? Is it an adjusted AC if it is held in a hand or appendage? Is there a chance it can fall off or be dropped if hit?

Or is this not actually covered in the rules and I need to look at houserules?

Sundering a Carried or Worn Object
You don’t use an opposed attack roll to damage a carried or worn object. Instead, just make an attack roll against the object’s AC. A carried or worn object’s AC is equal to 10 + its size modifier + the Dexterity modifier of the carrying or wearing character. Attacking a carried or worn object provokes an attack of opportunity just as attacking a held object does. To attempt to snatch away an item worn by a defender rather than damage it, see Disarm. You can’t sunder armor worn by another character.

Yes based on the RAW it's substantial easier to attack a diminutive held object in the hands of a high ac character than it is to hit that person with an attack. Further it's substantial easier to hit him with a sunder attempt than to grab the item from him :\.

Personally I find the rules to be relatively nonsensical and tend to break down at higher AC totals. I think a good solution would be to layer the size modifier on top of the character's AC. Thus attempting to sunder a small ring on a high ac foe would tend to be foiled by the layered protection of the defender.

Is there an opposed roll to just make them drop it, or is it a saving throw based on damage or something?

Trying to make them drop it would be handled instead with the "Disarm" action instead of the "Sunder" action... you don't get both at the same time (but I suppose if you do enough damage to sunder an object, part of it will likely be dropped anyway).
