The episode of The Venture Brothers entitled "Ghosts of the Sargasso." Definitely my favorite pirate media depiction (ok, so it's not a movie... it should be!).
 

In no particular order...

Captain Blood
Pirates of the Caribbean
Treasure Island
Peter Pan
The Princes Bride
The Crimson Mutual Assurance
The Black Swan
The Sea Hawk
The Crimson Pirate
(...and several others from the 30s, 40s, and 50s that I used to see on Saturday afternoons that have all run together in my mind...)

It was a good film; I certainly liked it.
Treasure Planet is also a good pirate film :)
The Goonies is, to an extent.
Otherwise, pretty much everyone else has mentioned my favorites.

The Master of Ballantrae is a fantastic, action-packed 1950s pirate movie (it's even in color). Errol Flynn does swashbuckling to a "T" in this romantic maritime adventure. A nobleman from Scotland (Flynn) rebels against the king, but is forced to hide out on the open sea with his Irish partner-in-crime when he fails to oust the ruler. He doesn't stay away for long, though -- his sights are set on revenge and winning the heart of the beautiful Lady Allison.

This movie has everything: a sexy lady pirate, burying treasure, ship to ship fighting and boarding actions, duels, romance, derring-do, political intrigue... A gem of a film, rarely seen or mentioned, but it truly is one of the all-time pirate movie greats. Check it out!!!
