D&D 5E Barbarian Frenzy

I have been playing it by having the barbarian choose between "rage" or "rage + frenzy" when they enter the rage state. Presumably if they decide they want to frenzy after already being in a rage, they could "rage again."

"When you rage" implies right at the moment of raging, similar to "when you hit with a melee weapon attack" or "when you are reduced to 0 hit points," which triggers right when you drop to 0 and not just any time you are laying around at 0 HP.

Rage is an ongoing state/action, much like falling, sleeping, wearing, etc.
None of your examples reflect that, but there are some written by the 5e authors in the book:

Slow Fall - you can use your reaction when you fall
Trinket 08 - unsettling dreams when you sleep near it
Medium Armor Master - When you wear medium armor
Lifestyle Expenses - when you lead an aristocratic lifestyle

If the flying creature you are ridning on is hit on a turn when you have already used your reaction, causing you to fall, you should be able to use the Slow Fall as a reaction during the next round after your reaction is off cooldown. Assuming you haven't already hit the ground.

If someone takes Trinket 08 and puts it near the pc while it is sleeping the unsettling dreams should start.

Those are some good finds.

I think one could argue that Slow Fall actually does only work at the instant of falling, and not during subsequent rounds. It's rare to fall for multiple rounds. I'd also say that Trinket 08 and Aristocratic Lifestyle aren't that important, or as precisely balanced, as something like Frenzy, because they are not part of the combat system. You've got me on Medium Armor Mastery, though.
