Best Houserule for multiclassing and multiattack?

I've noticed that the monk, ranger, and barbarian all get other abilities in addition to the extra attack at lvl 5. The monk gets a big boost from stunning strike, the ranger also gets a significant boost in level 2 spell slots, and the barbarian gets a small boost of movement.

The best solution would be to add in some small bonus at a level where an extra attack with no other bonus exists.

The already mentioned fighting style is an excellent choice. Chopping up the athlete or tavern brawler feat could also work, depending on the theme of the character. Generally it should be something physical or associated with combat.
 

You get nothing. Multicasting sacrifices power for versatility. Stop trying to add power back in to a class option that's supposed to dilute it.
 

So far I've read:

proficiencies
saving throw proficiencies
fighting style
a feat

I worry a feat is too much. I dislike saving throw proficiencies as it out classes what a solo classed character gets. Fighting styles don't generally overlap which makes this kinda meh especially as you may already have 2. Armor and weapon proficiencies I like but there are too many cases where this won't actually benefit you any (say anytime you start paladin or fighter).

What if the additional attack from another class became a once per short rest ability that read, "Once per short rest when you take the attack action you may make an additional attack as part of your attack action"?

Still boring and doesn't help with the multiclass feeling.

In your considering the suggestions you got from the thread, it looks like you overlooked what I think was the best of the bunch, you don't care for save proficiencies or for armor/weapon profs.

But skill profs seem ideal to me. You could just give one from the class's list.
