Some attributes I have so far:
I know his type is dragon.
Racial hit dice are d12's.
He has a shell on his back with spikes.
He is most likely large sized.
He has somewhat of a natural armor class due to the shell.
A small cone of fire as a breath weapon.
2 claw attacks.
A base speed 20 feet ground movement.
Maybe lowlight vision, since he lives in a castle.
The ability to tuck in his head ad arms and legs into his shell.
He has a tail but not nearly long enough to constitute a tail slap attack.
His alignment obviuosly neutral evil.
High strength up in the 20's and constititon up in the 18's, bit below avergae dex like 10 or so, average wisdom and intelligence, above aver age charisma like 14.
Pretty decent will and fortitude saves, but not as good reflex saves.
Some energy resistance to fire about 10, since his castle has lava traps and he breathes fire.

Thanks Im pretty sure The feral red halfdragon with green scales will go nicely, or better yet, maybe a large sized dragon turtle suited for land with yellow skin and a spiked green shell, with a small fire breath weapon along with opposable thumbs and the ability to stand upright.

Bowser stands about 12 feet tall and weighs approximately 1 ton. He speaks Common, Draconic, Abyssal, and Infernal. Bowser's natural weapons are treated as magic weapons for purposes of overcoming damage reduction. The save DC against his Frightful Presence is 16. Bowser does not eat his food raw, so he does not swallow victims whole; he prefers them well-cooked over his lava pits or with his breath weapon. Bowser's Rush speed is 50 feet. Bowser takes lethal damage from acid, cold, electricity, and sonic effects, but is otherwise as difficult to bloody or kill as the Tarrasque.

Breath Weapon (Su): Bowser possesses the same breath weapon as a Young Red Dragon, a cone of fire 40 feet long, which deals 6d10 points of fire damage. The Reflex save DC against Bowser's breath weapon is 18.

Yeah, I wasn't sure about that. The Tarrasque has fire immunity, but I scaled it down to resistance 10 figuring that a Scorching Ray or Fireball would still hurt Bowser, just not as much as normal. Probably better to just ditch it...
