Never underestimate the power of tradition. Plus, perhaps there is some honor seen in serving - like a rite of passage into manhood. Or some such nonsense.

If you have a feudal Monarchy the there are the following Questions.

Are the fiefs hereditary?
Are the Wardens hereditary?

The Wardens are they
appointed for life?
rule every Warden a quarter of the kingdom, or only his part of the Kingdoms border?
How is the goverment formed?
I mean such posts will be useful
as Chancellor(Chif of Royal administration, paperwork, diplomatics etc
Treasurer or how the post is called who collect the taxes etc for the king
Grand Connetable ( CinC of the armed forces of the Realms)
If necessary Admiral of the Realm(CinC of the armed forces at sea of the Realms)
Captain(s) of the Royal guard(s)


a few of this posts could get equivalents in the administration of the wardens.

Maybe it's not military service. The PCs could be fosterlings at the end of their foster period. Some would be learning knightly arts, some might be doing preliminary training to be maesters (a scholar/healer guild) or join the priesthood.

Just as an aside, I've read the books you're basing the world on, and I see you're drawing pretty heavily from them. One thing to watch out for would be players that have read it. You're going to need to make your world different enough that they won't know all the fun details, like how the Others walk the lands beyond The Wall, and that someone is about to assassinate the king.
