At most, you might be able to counter a Living Daylight with Living Darkness (but neither, especially the former, doesn't seem like an interesting opponent).

The Living Chain Lightning, on the other hand, was brutal
I could see the DM making up an effect for those few spells that say "X counters and dispels Y", for example Daylight counters and dispels Darkness. Perhaps it should do something to a living Darkness spell. But that's not in the rules.
