One things I am looking for is what makes Chinese,Chinese. (snip)

Food.

For the Chinese everything seems to revolve around food. Restaurants. Stalls. Butchers. Herbal remedies. If you want your Chinatown to feel authentic make sure that there are lots of places to eat and plenty of evidence (sights, smells, sounds) of cooking and eating going on.

Oh, and don't forget fortune-tellers and souvenir shops.
