Welp, with the last truly good option that I approved of as both a player and a DM gone (Aarakocra) gone, I guess the only thing left to do is to downvote and throw my upvote away, since @CleverNickName informs me I can't just downvote twice (grumble, grumble). It's sad, too, I actually like Changeling, but what are you gonna do? Spite is as spite does!

So what's the difference between all the Tieflings left?
There's tons of differences.

See, the Tiefling of Levistus is a human whose parents were somehow involved with a powerful creature from another plane....while the Tielfing of Mammon is a human whose parents were somehow involved with a different powerful creature from another plane. And both of those are dramatically different from the Aasimar, which is a human whose parents were somehow involved with a powerful creature from another plane. Note that while they are often confused, they are a fringe case--they are nothing at all like the Air Genasi, whose human parents were somehow involved with a powerful creature from another plane. Or the Variant Tiefling, which is a human whose parents were somehow involved with a powerful creature from another plane...
 

So what's the difference between all the Tieflings left?

The 'Variant' is the actual one.

The rest are all the result of the 4e retcon on what a Tiefling actually is, and the resulting dissatisfaction from having been forced into being tied to Asmodeus.

It was more than that I think. Back in 2e Planescape, a Tiefling's appearance varied widely. So much so that those at WoTC felt at the time that streamlining their appearance sounded like a good idea by the time 4e came around.
