now, what did you want to do with spears? in 1E/2E the verbeeg had a longer throwing range based on its total Str score.

OK, a spear normally has a range increment of 20 feet, anc can be thrown up to 5 range increments. Looking at the giant's rock throwing ability...

Rock Throwing (Ex): Adult giants are accomplished rock throwers and receive a +1 racial bonus on attack rolls when throwing rocks. A giant of at least Large size can hurl rocks weighing 40 to 50 pounds each (Small objects) up to five range increments. The size of the range increment varies with the giant’s variety. A Huge giant can hurl rocks of 60 to 80 pounds (Medium objects).

Rock Throwing (Ex): The range increment is 120 feet for a hill giant’s thrown rocks.

...and the verbeeg's spear throwing ability from past editions...

I'd go with the following:

Spear Throwing (Ex): Verbeegs are accomplished spear throwers. They may apply their Strength modifier rather than their Dexterity modifier to attack rolls and receive a +1 racial bonus on attack rolls when throwing spears. The range increment is 60 feet for a verbeeg's thrown spears.

Emphasis mine

Reminds me of the Brutal Throw feat from the 'Complete Adventurer' but as it's not in the SRD I guess it will have to be a special ability. :D

Updating in homebrews... not a lot left to do with this guy besides flavor text, since he doesn't have much in the way of powers.

He does need an LA though: he's got reach, unbalanced ability scores, and natural armor, so +3 or +4?

How is the CR?

Verbeeg as Characters

Verbeeg characters possess the following racial traits.
— +12 Strength, –2 Dexterity, +6 Constitution, +2 Wis.
—Large size. –1 penalty to Armor Class, –1 penalty on attack rolls, –4 penalty on Hide checks, +4 bonus on grapple checks, lifting and carrying limits double those of Medium characters.
—Space/Reach: 10 feet/10 feet.
—A verbeeg's base land speed is 40 feet.
—Low-light vision.
—Racial Hit Dice: A verbeeg begins with five levels of giant, which provide 5d8 Hit Dice, a base attack bonus of +3, and base saving throw bonuses of Fort +4, Ref +1, and Will +1.
—Racial Skills: A verbeeg's giant levels give it skill points equal to 8 x (2 + Int modifier). Its class skills are Climb, Intimidate, Jump, Listen, and Spot.
—Racial Feats: A verbeeg's giant levels give it two feats.
— +6 natural armor bonus.
—Special Attacks (see above): Spear throwing
—Weapon and Armor Proficiency: A verbeeg is automatically proficient with simple weapons, martial weapons, light and medium armor, and shields.
—Automatic Languages: Giant. Bonus Languages: Common, Draconic, Elven, Goblin, Orc.
—Favored Class: Barbarian (?).
—Level adjustment +4.

LA should be at least +4
+1 or even +2 for badly unbalanced ability scores (far fewer penalties than hill giant and ogre, for comparison)
+1 for reach greater than 5 ft.
+2 for natural armor armor greater than +5

For CR, I'd go 4. Although it has one less HD than the ogre (CR 3), its ability scores are better, its hit points higher, and its AC is better.

We need to add languages to the main description. The ones I listed in the "as characters" section are the same as those of the hill giant.
