HP only doubled for creatures that used to have resistance.

But also, a lot less double rolling.
I.e. roll to hit, and then roll a save vs poison/grapple/ect..

Now it's just hit and take the effect.

For the most part! There's a tiny few that still have the attack + save thing, to avoid an additional nasty effect, like the Arcanaloth with its Soul Tome. You take the damage if it hits, but you make the save to avoid getting slurped into the book.

Reading through it a bit more thoroughly now, I really like how they adapted the story of the Brazen Bull into a variant of the gorgon.
