May I suggest that you start out with the ones that have featured in WotC adventures, i.e. Orcus, Baphomet, Demogorgon, Yeenoghu and the rest of the demons (primarily from OotA), Zariel, Bel, Tiamat from Avernus, Klauth and Imyrith etc.?

I would base the initial Mythic versions on the ones out of the books, before getting crazy with them and doing your own Epic Mythic versions.

During my 3 year Dnd campaign it happened. Went from level 0 to 26 with the same 6 players. We grew to almost Godlike powers. We were tasked with saving reality itself. Orcus was behind it. It was his power play. We killed 2 corrupted gods on our way, and had to find new replacements to take their mantle correctly. With 6 level 26 players one of them being the original God of death at the beginning of his existence Orcus was destroyed. What passed for his soul was cast into chaos and truly unmade by Thanos. But literally the fabric of reality was on the line.
