Can someone point me to documentation about this concept of a "ribbon"?

Moai Traits

Moai share a number of traits in common with each other.

Ability Score Increase

Your Strength score increases by 2, and your Wisdom score increases by 1.

Natural Athlete

You have proficiency in the Athletics skill.

Stone’s Endurance

You can focus yourself to occasionally shrug off injury. When you take damage, you can use your reaction to roll a d12. Add your Constitution modifier to the number rolled, and reduce the damage by that total. After you use this trait, you can’t use it again until you finish a short or long rest.

Powerful Build

You count as one size larger when determining your carrying capacity and the weight you can push, drag, or lift.

Island Born

You’re acclimated to high wind and heavy precipitation. You suffer no disadvantage to Wisdom (Perception) checks under those conditions.

Pretty cool, I'm stealing those.
I'm also giving them Vehicle (water) proficiency and twice the time underwater as part of Island born.
 

Feyknight subrace:

Born from from Goliaths who were made soldier slaves to Eldritch Giants, who interbreed with a few of their slaves, the Goliath Feyknights are natives of the Feywild, even though they overthrew their masters centuries ago.

Goliath Feynights have neon pink or neon purple skin and have patterns of glowing blueish white writing on various parts of their body.

Traits: can cast Thunder Step once per day and they speak Sylvan.

Gladitorians: born in the arena, one part entertain, one part warrior by blood, the Gladitorians are say to be one of the most beautiful Goliath races for they were breed for show.

Gladitorians are unusual in that they have hait, usual at minium shoulder length. Their skin is also smooth, and the colour of white or black marble or more rarely opals.

Traits: Gladitorian Weapon Profiency: Trident, Net, Long Sword, Spear. Martial Maneuvers: Choose two Martial Manvuevers, you have a d6 for this. You are profiency in Proformance Skill.

I wish more races got ribbon abilities.
 


I do not want to. I do not like Goliath to be the medium sized giant.

But I got something for you:
I designed a Halfgiant which fits into Bound Accuracy:


The main solution: Treat the Halfgiant like an enlarged (by spell) humanoid.
Means: he does 1d4 extra damage with weapon attacks. With that you can reflect his bigger strength.
Also he does 2d4 damage with unarmed attacks.

With these parameters you can stay within the 20 max for STR and CON range:

Halfgiant

Size Large(9-12 ft)
Movement 40
Doubled encumbrance

STR+2
CON+2
Advantage on STR checks and saving throws

Disadvantage:
Needs 4 times the amount of food and water.
Cannot use equipment for medium sized humanoids
Equipment costs 4 times the normal prices

Very plain and easy and within BA. It does not unbalance anything.
If you want to, you could give him some reach with weapon attacks, e.g, 10 ft for normal weapons 30 ft for large weapons.
 


Andre the giant would be an example of a Goliath, 7'4" tall, 540 lbs.

But Andre was nonetheless a human.
I like that medium size goes to 8 ft to account for tall humans. It also establishes that giants - including goliaths - should be taller than 8 foot and have the bulk to match - giants arent just tall humans ...
