Does Enhanncement on a Shield stack with Enh. on Armor?

Yes. They are enhancement bonuses on different items. Sort of like getting an enhancement bonus on Dex and Str.

The way I view enhancement bonuses are just an increase in an items normal bonus. So, a Chain Shirt +1 gives a total of +5 Armor bonus to AC (which really breaks down to a +4 normal Armor bonus and a +1 enhancement bonus). A Large Steel Shield +1 would thus be a +3 Shield bonus to AC (+2 from the normal shield bonus and +1 from the enhancement bonus). Just think of it as extending the normal bonus you get from an item.
