PC, if you've got Tome of Horrors, there's a "dire creature" template in there, and I don't think there's anything about it that would make it inappropriate for 3.5 over 3E. You could just slap that on a normal rabbit, and then

Alternatively, the same book has stats for giant hamsters, which could probably be tweaked to rabbits with a minimum of fuss.
