Beauty!

To add onto the old school feel, I'd recommend Green Ronin's Cavalier's and Assassin's Handbooks, to provide those classes as core rather than prestige.

I am interested in running a campaign like this, but without the Eldritch Sorcery. Is it really necessary?

No, absolutely not necessary, but the first time you whip out a cleric or sorcerer armed exclusively with spells from this book, you'll be glad you did. If the guy attacking the party throws out 3 magic missles, they pretty much know they're up against a 5th lvl wizard, but if the guy in the funny hat is throwing out Earthen Blast and Death March, they're gonna be a lot more intimidated and cautious.

I prefer my campaigns served with fries and a Diet Coke.

D&D 3E (with the parts from 3.5 that I like, which are few)
Forgotten Realms, Rokugan, or homebrew setting
Any relevant supplement books for the setting
Any WoTC splat book I can get something good out of
Any indie publisher book I happen to own
The Wurst of Grimtooth's Traps (this one's just too much fun to pass up if you like old school traps :] )
Elements of Magic Revised or Elements of Magic - Mythic Earth
