Monster Mythology rocks too. Basically I adore any books on that subject.

2e was fantastic for this:

Complete Priest's Handbook (introduces forces and philosophies, and underpowered followers of generic archetype gods)

Legends & Lore Fleshes out the 1e Deities & Demigods human pantheons with much more lore, including nontheistic Taoist and Confucian spellcasting priests.

Monster Mythology nonhuman counterpart to L&L with demihuman pantheons, humanoid ones, giant ones, and gods for things like beholders, illithids, vampires, and fey courts.

The Forgotten Realms Adventures hardcover with a bunch of FR deities with their own specialty priests.

The Forgotten Realms trilogy of god books, the high point for me of D&D god books, Faiths & Avatars (core major gods), Powers & Pantheons (demigods and Egyptian and Babylonian pantheons), and Demihuman Deities (demihumans including drow).

For Greyhawk there was the From the Ashes setting boxed set with a section of similar style entries for the Greyhawk deities that I never really read through, having been thoroughly familiar with the 1e setting gods and my reading at the time focusing more on the setting changes.

And for Birthright there was the Book of Priestcraft which does the same for the gods of the Birthright setting and which I eventually got as a PDF but have not really delved into.

I couldn't say if any of the 2e Dragonlance setting stuff had similar things for the Krynn deities.

Fortunately, @AuldDragon has expanded the Faiths and Avatars treatment to other settings, including Krynn, online.

The lore is the biggest reason why I favor 2e in general over other editions.

Oh man, how did I forget Forgotten Realms Adventures! I love that book!

2e Forgotten Realms Adventures was my gateway book and the one I point at when people say fantasy doesn't have firearms.

I also learned new words (woot Ribald!)
In fact, firearms in The Realms came from two sources- Gond gave the Lantanese smoke powder and the arquebus, and later, a Spelljammer visited Waterdeep to sell some wheellock pistols!

1) Forgotten Realms Adventures - 2e hardcover book.
2) Forgotten Realms Campaign Setting - 3e hardcover book.
3) Old Empires - 2e supplement.
4) The Ruins of Myth Drannor - 2e boxed set.
5) The Ruins of Undermountain - 2e boxed set.
6) Magic of Faerun - 3e hardcover book.
7) The Shining South - 3e hardcover book.
Reading through Old Empires a little bit every evening. It’s a great, weird book! Like, there’s such a tremendous amount in it, the author clearly must have had fun writing it.
