Any method is fine, as long as one important condition is fulfilled:

If you use feats, no PC starts with a score higher than 15.

(Rolling a 16 or 17 amounts to a free feat. Rolling an 18 amounts to two free feats. That's crazily overpowered compared to not getting these free feats. Without feats, rolling an 18 is still better than only rolling a 15, of course, but only +2 attack/damage better, not game-changer-level better)

I like stats to be unpredictable, but I still want balance. In my opinion, the most fun way to generate ability scores is to simulate 4D6-drop-the-lowest with a deck of cards. In other words, the numbers are still random, but if the first few ability scores are very low, it ensures the rest will be high. I wrote a program to do this, and all my players have loved it.

However they are supposed to be heroic adventurers - when I DM for kids I let them have 7 rolls, keep the best 6 abilities scores

In my adult group, 1 player choose to go with standard array. Most of us like the randomness of rolling and assigning scores to abilities as we see fit. I think it gives them more of a connection to their character.
