Depending what being "dark" meant for the sun's energy output (and completely ignoring that it's a fantasy world), lighter skin might evolve. As others have led me to understand, more melanin inhibits vitamin D production in low-UV environments. If the Dark Sun is a low-UV sun, then lighter skin becomes a selective advantage.
