Fixing Rookie Mistakes

I will be starting a campaign with my group pretty soon. The issue is that I am still pretty new to DMing and they are very new to playing. Because they are so new they make rookie mistakes a lot. The issue is that because I am new, Im not sure how to teach them (read: put them in positions to learn) how to use sound tactics, ask good questions, or even make effective characters. I typically try to make the adventure as basic as I can, but it seems as if they are not entertained (ie the battles dont seem to rivit them). However, when I try to through plot twists and role playing opprotunities they seem to get lost. I also think that I havent found the proper difficulty for battles or a encounter/day ratio that fits well.

My questions: What kinds of things should I try to emphasize? What is a fair CR fight for 3 Xth level PCs? What ideas for plots tickle your fancy (I have an idea of my big picture, but reading other peoples stuff is always inspirational). Thanks.
