Bestow Curse (choose 50% to act normally or do nothing) + displacement.

Would this mean that the opposing attacker would need to do two rolls to hit at 50%?

Yes. Toss in Blink for another cumulative miss chance.

Roll to see if you can act; roll to see if you target appropriately; roll to see if the target is still material. Each is circumvented by a different circumstance (make your save, see through illusions/close your eyes and rely on blind-fighting, and have a force attack or other ability to strike ethereal targets).

That works, although it's risky (in that Bestow Curse could fail). Blink is also risky (IIRC, it gives the blinkee a miss chance on everything).
